Pedro José Jiménez Maradiaga is the owner of Finca Ciruelo, located at 1250 meters above sea level, in the village of Los Planes, Municipality of Trojes, Department of El Paraíso.
He considers himself a producer of specialty coffees, because he has been maintaining his farm of Parainema for three years. (1.3 hectares) and he takes all the necessary measures to have the best quality.
Pedro José likes to collaborate with his community and that is why he strives to improve his farm and obtain better prices. In this edition he participates with a washed Parainema.
Pedro José combines growing coffee with timber and fruit trees to protect the environment. He also has a fish farm to secure a good source of nourishment for his family.
He has a detailed coffee process from harvesting only the ripe coffee cherry; the fermentation process that lasts from 36 to 40 hours and then a slow sun drying from 26 to 32 days. He finalizes with the proper storage to keep the coffee quality.

We all want to be Cup of Excellence champions. I have many projects and dreams not only for my family, but also for my community. It is worth it, to cultivate coffee with good quality and to be recognized for it.
