Finca Consuelo - Mexico 2021

It is a farm of 10 hectars, with growing coffee area of 6 hectars. The farm has variety Costa Rica 95, sourranded for shadow by trees Fraxinus uhdei, Inga vera, among others. My father inherited land from me and my brother recommended that I grow coffee and enter the world of specialty coffees. To compete in COE I have been improving the process, harvesting just mature cherries, slow drying. We safe the coffee in GrainPro bags inside yute sacks, over tarims. I cup my coffee with friends to evaluate each cut. To conserve the soil, I clear the ground. I commercialize my coffee parchament and green coffee. I have experience in the preparation of micro lots. The water I use is mountain spring water. The harvest of this lot was in the month of march. The average annual temperature in Zongolica is 21 ° and the average annual rainfall is 599 mm.
