Is the first time I participate in COE Mexico. I have my farm certified Organic Production EU,NOP,JAS,LPO,BIOSUISSE. The Varieties produced in the farm are Bourbon 30%, Catimor 40%, Marsellesa 30%. To produce this lot we harvest coffee cherries by colour/maturation, we did flotation removing floters and impurities. The fermentation was done in plastic Aerobic (uncovered containers) by 24 hours. The drying was done at the sun at patio/sun deck.
