NW -I Amm Doi Coffee Farm- Thailand 2025

I Amm Doi Farm, situated in the Doi Yao, Pha Mon, and Pha Chi areas, the origins of our coffee cultivation can be traced back to my father, who was a researcher specializing in coffee varieties. In 1997, he began experimenting with planting coffee seedlings on his own farm. As certain varieties demonstrated strong growth and resilience, he expanded the plantation and supported interested local farmers by sharing successful cultivars.

I had the opportunity to assist with this work on numerous occasions. However, after the conclusion of the project, some of the original coffee plots began to decline in quality. As I approached graduation and prepared to take over the farm, I began studying various coffee processing techniques based on my father's research and adapted them to suit the specific conditions of our land.

Drawing on my expertise in microbiology, I have incorporated the use of beneficial microorganisms—such as yeast, molds, and bacteria—to enhance the coffee fermentation process, resulting in the creation of distinctive organic compounds. These innovations have contributed to elevating the quality of coffee production in the region, transforming it from commercial-grade coffee to specialty-grade coffee.
