Javier is a third generation coffee grower who owns a 4 hectares farm where he grows Pink Bourbon and Caturra. Based on different trials, Javier implemented a 72 hours fermentation in cherry that was then dried as natural for 25 days in African beds.
He wants to keep participating in this kind of contests and encourages other coffee growers to do it as it is one of the best ways to find a new value for their coffee.
