Description

This is a carefully curated garden by MAVCOFFEE, dedicated exclusively to cultivating and exploring rare and exotic coffee varieties from around the world. Strategically located between 1,750 and 2,000 meters above sea level in the iconic Apaneca-Ilamatepec mountain range, this farm was established with the specific purpose of discovering how prestigious varieties such as Geisha, Mocha, Kenya, Tabi, Typica, Maragogipe, and Bourbon express themselves in this unique terroir.

We spared no expense, traveling to other countries to acquire these prized seeds. Unlike others, we first sourced the seeds and only then sought out the ideal property—one that would meet the necessary conditions for the plants to develop their full range of attributes, perceived in their aroma and fragrance.

In 2013, we obtained our first Geisha seeds in Boquete, Panama, through Francisco Serracín, who first introduced the variety to Panama in 1963. It wasn’t until 2003 that, while separately cupping coffee from their farms, Serracín, Andrés López, and Daniel Peterson recognized the extraordinary qualities of the Geisha T.2722. We were personally hosted by Francisco Serracín, with whom we cupped and confirmed the variety’s exceptional characteristics.

The name Finca La Pacaya was chosen during our search for the perfect location to plant these seeds. We discovered a field of pacaya palms in the hamlet of Ojo de Agua–Tapantugusto, in the Apaneca-Ilamatepec range, located in the northern part of the Sonsonate department at 1,800 meters above sea level. The site proved ideal for the Geisha T.2722 variety, with the right soil, altitude, and climate to achieve the citric acidity that can be perceived from its fragrance and aroma, combined with a balanced body and acidity.

La Pacaya has been recognized on multiple occasions for producing exceptional coffees, consistently standing out in both national and international competitions. The Geisha from Finca La Pacaya, in particular, has become an icon of quality at the Cup of Excellence:

4th place in 2020 with a score of 89.12,

6th place in 2021 with 89.32,

4th place in 2022 with 90.07, and

1st place in 2025 with 90.30 points.
