Description
Farm San Antonio is a family farm worked for over 45 years, Mrs. Maria Felicita Mairena, has left the administration to her son Mr. Michael Günkel Mairena to take over the management and administration of the farm.
It is located in the community of La Escalera, in the municipality of Matagalpa, and has an area of 78 hectares that are cultivated with shade-grown coffee using agroforestry systems and good agricultural practices.
Forty-five percent of the farms are forest reserves, located in the El Arenal Natural Reserve, one of the few cloud forest reserves in Nicaragua. Several protected water sources originate in this mountain fog zone and supply drinking water to the community of Las Escaleras in YásicaNorte. Water production in the mountainous area of the farms is abundant and feeds the YásicaRiver basin.
The farm grows mainly high quality varieties such as caturra, Castilla, Marsellesa, Pacamara.
At Farm San Antonio the preservation of biodiversity and environmental protection are of high importance, which is why we implement practices that promote sustainable coffee farming, using mechanized weeding, eliminating the use of herbicides for weed control, regenerative agriculture practices are implemented as the use of microorganisms of mountains, the use of cover crops, reforestation.
Every year we review the quality processes to work during the harvest, starting from the selection of the ripe cherry, measuring parameters such as brix degrees that allow us to determine the optimal time for harvesting, the coffee is floated to eliminate any dry, vain or not in the required conditions, another important point is the transfer that takes a logistics that represents a challenge for us as producers because it must be moved in boxes and in the shortest time possible to achieve a good quality.
Participation in the Cup of Excellence motivates us as producers to evolve in our coffee processes and to implement protocols that allow us to be competitive in this competition and to improve every year.
